Egg Nests with Caviar
To make these egg batter nests topped with caviar, crack the egg in a bowl with salt and pepper and proceed to whisk with a fork until it is perfectly mixed. Take a 3cm radius ladle and grease it with butter. Place it on the stove over a low flame and pour a spoonful of egg mix and stir it so it spreads at the bottom and borders until the crepe concoction is ready. Repeat until all there is no more left. Arrange them all in plates and put a touch of mascarpone inside each one. Finally, put some caviar on top. Serve immediately.
