Blue Potato and Caviar Tartines



To prepare this tantalizing dish, wash the potatoes; use the blue variety due to their eye catching color and robust flavor. Steam them for about 20 minutes. Let them cool off and peel them. Cut each potato into a quarter inch slices, slightly salt them and put in a plate before arranging the caviar and the rest of ingredients. Top the blue steamed potato canapès with a touch of sour cream, a spoonful of caviar and few terragon leaves.
