Baby Steamed Potatoes topped with Caviar and Savoury Fromage Blanc
Begin by peeling the baby potatoes and proceed to steam them for about 25 minutes. Peel and hollow them slightly with a melon baller or small spoon in order to dig out a limited portion from each potato while leaving a shallow hole that will be filled later. Mash the extracted remains of the potatoes with a fork and mix them with the fromage blanc and a pinch of salt. Put the mixture inside them and top with a spoon of fromage blanc and plenty of caviar.
